Hahn Estates Central Coast Cabernet Sauvignon 2006

    Our 2006 Hahn Cabernet Sauvignon is another fantastic vintage for the winery. Cabernet from our Paso Robles Sereno Vista Vineyard, the primary component of the blend, was blended with grapes from Cass Vineyard, also from Paso Robles, and grapes harvested from block FS out of our own Smith Vineyard in the Santa Lucia Highlands. All lots received the same treatment and attention. We used a combination of UCLM 377 and D-254 yeasts in 15 ton open-top fermentation tanks. These fermentations lasted about 9 days on the average during which time the tanks were pumped over 34 times a day until dry. Once pressed, the wines were allowed to settle during induced malolactic fermentation for about three weeks prior to racking into a combination of new and neutral French oak barrels. As always, our various Cabernet Sauvignon lots are kept separate until the final blend, which took place after 11 months of aging. The final blend saw the addition of Merlot from our Ste. Philippe Vineyard and Petit Verdot from the Sereno Vista Vineyard.
    Bright aromatics of raspberry and cassis are underscored with spice and toasted notes. Plums, currant, and other dark fruits fill the mouth. Resolved and melting tannins lift the flavors and leave the mouth with a perception of Swiss milk chocolate. A delicate thread of acidity helps carry the length well into the finish. If you are feeling creative, you can try this wine with some of the dishes I have paired with our Cabernet: Andoullie sausage stuffed pork tenderloin, Lamb loin chops with Rosemary Polenta Fries, or Braised Veal Osso Buco. If not, then any hearty meat or tomato based pasta will do.

    Color: Garnet with lighter ruby edges

    Nose: Very muted, but some blackberry and dusty charred earth. Some hint of green leaf.

    Palate: Full-bodied, sinuous mouthfeel. That char comes in here too, with a promising black smokey fruit, but then it just ends quite quickly. Good for the price point, however, as you can find it much cheaper in CA.
