Description
Deep, intense, ruby-red in color with an accent of magenta at the rim. Loaded with a bouquet of tantalizing plums, figs, blackberries and pomegranate with a dash of white chocolate, caramel and vanilla. Soft and elegant on entry this wine expands into multi-dimensional layers of rich black fruit flavors, fresh roasted coffee and a dusting of sweet Belgian cocoa. The mid palate shows a rare balance of finesse and power that is both pleasing yet demanding of your attention. The long, persistent finish can be attributed to a great balance between a rich full body, good concentration, ripe-polished tannins and natural acidity. A dose of cracked black pepper & toasty-smoky oak are incorporated into a well integrated framework.

What makes this wine so fun to make is that we never know what the final blend will be until the very last moment. Of course, much of this is based on what Mother Nature gives us to work with. We then start playing around with different percentages of Cabernet & Syrah until we find one that strikes a nerve. Once that’s done, we start all over again and re-taste everything just to make sure we all agree on the same blend. I know that it sounds like tough work, but somebody’s got to do it! If done properly each new wine should bring back fond memories of the previous vintage, yet give you something to look forward to in the future.
