The 2005 Keever Vineyards Cabernet Sauvignon was released on November 1, 2007.
The aromas are predominantly of dark cherries, blueberry jam, spiced plums, caramel and vanilla. The wine is very focused on dark berry fruits with a hint of oak behind. It is classically elegant at entry with very fruit-centered flavors up front; strong blueberry, cherry and spice. Firm and powerful structure but the tannins are nicely resolved. The finish is satiny and very fruit-centered. Once again, Celia has created an exquisite, well-balanced, smooth wine with soft tannins and wonderful mouth-feel. Perfect by itself and wonderful with food. We know you will enjoy it.
The 2005 harvest was our largest to date. We brought in 14.3 tons of Cabernet Sauvignon. This vintage, as with our previous vintages, is 100% Cabernet from our estate vineyard. In the past, our blend has been dominated by two clones, 7 and 337. In this vintage, the 2002 plantings of clones 191 and 341 make up more than half the final blend, giving it greater depth of flavor and spice than before.
