    Craig Williamsí Winemaker Notes: Owing to our penchant for producing innovative dessert wines, it was only a matter of time before botrytised Semillon. Produced in the style of a classic French Sauternes (in years when weather conditions permit), Delice du Semillon is made by carefully hand-selecting botrylised grape clusters that are pressed directly to barrel for fermentation and aging.
    This Delice du Semillon is 100% estate-grown, picked at 38 Brix and fermented to 14.8% residual sugar and 13.4% alcohol. Produced with minimal handling in the cellar, the wine was aged 14 months in 60-gallon French oak barrels and bottled January 24, 1995. Multi-layered and complex, Delice du Semillon offers up a delicate, perfumed bouquet, and luscious fruit flavors of orange, apple, honey and apricot.
