    This is our first attempt at making a sulfite free white wine and we learned many lessons. The most important is "Give the wine some time to get over bottle shock." When you bottle a white wine with sulfites, the sulfites bind up with the oxygen that comes in and preserves the aromatic compounds that make them smell nice. Without sulfites and without red pigment, which can also buffer the oxygen, the wine temporarily looses its characteristic aromas and develops a slight dry sherry nose. However, after a few months the wine seems to be able to come back into balance and show some of its characteristic varietal flavors. I tried it this weekend and really enjoyed it. The nose is still subdued, but the fruit had returned on the pallet. It was lovely with melon & mineral flavors. Folks who tasted it at our Memorial Day release at the winery liked it. It was one of the better selling wines. Get a bottle and try it. Let me know what you think. We only made 102 cases.

    I am a red wine drinker and rarely dabble in whites. But when I do have a white, I'm rather picky. I'm looking for something along the lines of the Ace Pear Cider of wines. This stuff has a peary flavor and goes great with sushi. A little TOO mild to be a 5 star, but very nice overall. Would definitely drown my sorrows in several bottles of this, with no remorse.
