    WINEMAKER NOTES
    Our 2004 Paso Robles Cabernet Sauvignon is a rich and vibrant wine, blended with traditional Bordeaux varietals and a touch of Syrah. The traditional Bordeaux varietals were used to enhance the aromatics and mouth feel, while staying true to traditional Cabernet character. Malbec, the largest blender, enhanced the anise spice while adding richness to the mid- palate, Petite Verdot added depth in color and richness, while Merlot and Cabernet Franc intensified the bright cherry character and added silky tannins. Syrah, the final blender, was added to smooth out some aggressive tannins on the finish while enhancing the fresh fruit characteristics. The result of this blending alchemy is a well structured Cabernet with aromas and flavors of anise, black and bing cherries, and cedar, coupled with a rich mouth feel yielding smooth tannins. The vibrant acidity found in this wine makes for a perfect match with a wide range of foods, including prime rib, barbecued chicken, and spicy grilled vegetables.
