The world's premier red wine grape, Cabernet Sauvignon is produced in every major growing region of the world. Much of the world?s best wines are made from this grape, despite its long growing season and low yields. It is the dominant grape in France's Bordeaux region and the most successful red wine produced in California. Cabernet Sauvignon produces tannic wines that are typically full-flavored with cedar, dark cherry, tobacco, and black current tastes. Warm climate growth is characterized by blackcurrant, cherry, and red berry notes. Cool climate growth results in greener notes such as olive or green pepper. Old world Cabernet Sauvignon wines typically produce an aroma of violet, blackcurrant, cedar, and spice. New world wines, while similar, often have strong chocolate, berry, pepper, and earth aromas. Cabernet Sauvignon wines achieve peak flavor after five to ten years of aging, and the grapes are typically blended with other varieties such as Merlot or Cabernet Franc to make wines with increased complexity. In other parts of the world, Cabernet Sauvignon may be known as Petit Cabernet, Sauvignon Rouge, and Vidure.
