The wine’s layers of flavour excite and intrigue. It is a fresh and ripely flavoured wine with fantastic intensity, finishing with crisp and racy acidity. WINEMAKING The fruit parcels were harvested at varying levels of ripeness (between 21-24 brix) over a five week period. The fruit was crushed, pressed and cold settled at 6°C for 24 hours before being racked clean off lees for fermentation. Both neutral and aromatic yeast strains were used to read more... inoculate the clear juice. The fermentation was conducted at 12-14°C to maximise retention of delicate flavour and aromatics. VINEYARDS The fruit for this wine is sourced from vineyards in Marlborough from the top of the Wairau Valley to the top of the Awatere Valley. The majority of the vineyards are grown on the VSP training method and special care is taken to maintain vine health, clean fruit and vine balance.
